Perfect Roast Potatoes
Ingredients
1 and a half pounds or 675 g medium sized Desiree or Maris Piper potatoes
Great Ness Rapeseed Oil, enough to just cover base of roasting tin
Serves 4
Method
Pre heat the oven to gas mark 7, 425℉, 220℃ Peel the potatoes and cut into even sized pieces Place in saucepan and cover with boiling water Parboil for 5 minutes Drain off the water Shake the saucepan vigorously from side to side to roughen up the edges of partially cooked potatoes Carefully remove preheated roasting tin with the oil from the oven Lower the potatoes into the oil Ensure every potato is coated with the oil Return to the highest shelf in the oven Cook for 40-45 minutes turning occasionally until golden brown
